If you’ve ever been to BJ’s brewhouse you may have had their Parmesan crusted chicken dish. This is my keto remake of it.
- 3 chicken breasts (~1.5 pounds) cut in half length-wise to make cutlets (or just buy cutlets)
- 1/4 cup almond flour
- 1/4 cup shredded Parmesan cheese, such as digorno
- 1/4 cup grated Parmesan cheese
- 1 TBSP ground flax seed
- 1 tsp onion powder
- 1 tsp pink himalayan sea salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp turmeric
- 2 eggs, beaten
- 2 TBSP grass fed butter
- Preheat oven to 400 F
- Spray a large baking sheet with cooking spray, such as coconut oil spray
- Take a medium tall pan, such as a loaf pan, and make your “breading” mixture by combining the almond flour, Parmesan cheeses, ground flax seed, and seasonings. Mix together well and get any chunks out of the almond flour.
- Dip each chicken cutlet in the egg wash with your wet hand, and move to breading mixture pan. Shake pan to coat chicken. With your dry hand, flip the chicken and shake pan again, being sure to coat the entire cutlet in the mixture.
- Use your dry hand to move the chicken to the greased pan.
- Repeat for the remaining chicken breasts
- Melt the butter and pour oven the chickens
- Bake for 30 minutes or until juices run clear
- Let rest then serve with the sauce below

Low carb keto Parmesan almond flour crusted chicken
White wine lemon butter sauce:
I like to start the sauce as soon as the chicken goes into the oven so that it has a chance to thicken up.
- 4 TBSP salted grassfed butter
- 1/4 cup dry white wine such as Pinot Grigio. Use a wine you’d actually drink. Don’t use “cooking wine”
- 2 TBSP lemon juice
- 1/2 tsp granulated stevia/erythritol blend such as pyure, or any other keto-approved sweetener
- A dash of salt
- 1 and 1/4 cup of organic heavy whipping cream
- Melt butter in a small sauce pan over medium heat
- Add wine, stir and simmer for a minute
- Stir in lemon juice, sweetener, and salt
- Stir in cream and reduce heat to low. Simmer for at least 12 minutes to thicken, stirring every minute or so
