This low carb option for Cheesy bread-sticks uses a cauliflower base instead of bread. Delicious and nutritious.

  • 3 cups of cauliflower, riced (you can just use a food processor and pulse raw cauliflower until riced, or shred on a cheese grater)
  • 2 cups of shredded mozzarella cheese
  • 2 eggs
  • 1 tsp Italian Seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & Pepper
  • Dried parsley
  • Rao’s Pizza or Marinara sauce
  1. Microwave the riced cauliflower for about 6 or so minutes, until soft. Drain and try to squeeze all the liquid out. Cool and drain again.
  2. Preheat oven to 450 F
  3. In a bowl, beat the eggs and add in some salt and pepper
  4. In another bowl, combine the drained cauliflower and 1/2 cup of the cheese.
  5. Pour eggs over the cauliflower and stir, then stir in Italian seasoning, garlic powder and onion powder, and a little more salt and pepper
  6. Grease a rectangle baking sheet, and spread the cauliflower mixture over the entire thing. Press down so the mixture is tight and even.
  7. Bake for 10+ minutes until browning around the edges, and the mixture seems stable in the middle. Time varies based on how big your baking sheet is and therefore how thick your cheesesticks will be. Just watch it after 10 minutes.
  8. Remove and sprinkle the remaining cup of cheese on top. Bake another 5-8 minutes or until cheese is melted.
  9. Sprinkle on parsley, and optionally sprinkle on parmesan cheese
  10. Cool then cut with a pizza slicer. Serve with heated Rao’s sauce
