This is a quick and easy way to make eggs a little more exciting –

  • 1 tsp of bacon fat or butter
  • 3 Eggs, pasture-raised
  • 1/2 of a medium hass Avocado (~50g)
  • 2 slices of cheese. For this recipe I used sharp white cheddar and pepperjack.
  • Salt, Pepper, Onion powder
  1. Heat a medium skillet over low very low heat
  2. Add the bacon fat or butter and let it melt
  3. Once melted, crack the 3 eggs into the pan. Let them slowly cook until the middle starts to turn white, the take a spatula and break the yolk. Stir gently (you still want white pieces at the end – this is not a full scramble)
  4. Add the avocado to the pan
  5. Once the eggs look mostly cooked (yellow has hardened up softly), add the cheese to the pan in small pieces. Stir gently.
  6. Add the seasonings and remove from heat. Serve immediately.
