This is a quick and easy way to make eggs a little more exciting –
- 1 tsp of bacon fat or butter
- 3 Eggs, pasture-raised
- 1/2 of a medium hass Avocado (~50g)
- 2 slices of cheese. For this recipe I used sharp white cheddar and pepperjack.
- Salt, Pepper, Onion powder
- Heat a medium skillet over low very low heat
- Add the bacon fat or butter and let it melt
- Once melted, crack the 3 eggs into the pan. Let them slowly cook until the middle starts to turn white, the take a spatula and break the yolk. Stir gently (you still want white pieces at the end – this is not a full scramble)
- Add the avocado to the pan
- Once the eggs look mostly cooked (yellow has hardened up softly), add the cheese to the pan in small pieces. Stir gently.
- Add the seasonings and remove from heat. Serve immediately.
