There are so many different versions of the low carb 90 second bread recipes, so which one do you choose? I’m going to try out the various recipes of “90 second bread” and comment on each.
Note: A lot of recipes on Keto call for Almond Meal or Almond Flour. This can be expensive in the store, but I buy this one on Amazon in bulk.
Version 1 – 1/8/17
- 1 TBSP butter
- 1 TBSP Cream cheese
- 3 TBSP almond meal
- 1 TBSP flax meal
- 1/2 tsp baking powder
- Pinch of salt
- 1 egg
- Melt butter and cream cheese in microwave safe bowl
- Combine dry ingredients in a separate bowl and mix together
- Add dry to melted butter/cream cheese bowl and stir well to combine
- Spray a ramekin with cooking spray and pour the batter in
- Microwave 90 seconds
Comments –

- Maybe it was the ramekin I used, but I thought the bread was a little too thick when cut in half. I enjoyed it more when I cut it into fourths.
- Broiling the bread after cutting for a minute helps to toast the bread. Makes it better consistency
- Taste was okay. It did the job of satisfying what I wanted it for: A “muffin” with cream cheese:

Version 2 – 1/14/17
- 1.5 TBSP butter, melted
- 3 TBSP almond flour
- 1/2 tsp baking powder
- 1 egg
- pinch of salt
- Stir almond flour, baking powder, and salt together. Pour melted butter and an egg over it. Stir well to combine.
- Microwave 90 seconds in a glass bowl or ramekin sprayed with cooking spray
Comments:
- This was on a little too eggy for my preference but still tasted okay
- I cut it in half and broiled it on each side for 2 minutes, and then I turned it into a sandwich with cheese, mayo and ham and heated that over the broiler another minute or so.
- This resembled more of a biscuit in my opinion.
- It was sturdy enough for my sandwich.

90 second keto bread, version 2

90 second keto bread sandwich with ham, mayo, and cheese
Version 3 – 1/15/17
Ok so this one isn’t technically 90 seconds, but it’s close.
- 2 TBSP unsweetened almond butter
- 1 TBSP grass-fed salted butter
- 2 TBSP almond flour
- Pinch of salt
- 1/2 tsp baking powder
- 1 TBSP unsweetened almond milk
- 1 free-range egg, beaten
- Put almond butter and butter in a small microwavable bowl. Microwave 30 seconds. Stir afterwards to combine and set aside.
- In a small bowl, combine flour, salt and baking powder and stir together. Then add the almond milk and beaten egg. Stir well to combine.
- Combine both mixtures (pour one bowl into the other) and stir well to combine
- Spray a ramekin with cooking spray (such as coconut oil spray) and pour the mixture into it.
- Microwave for 2 minutes. I know, I know, the extra 30 seconds is hard to wait.
- Let it cool and then cut it in either halves or fourths. Toast or broil on both sides to make crisp and crumbly.
Comments:
- I think this one tastes the best out of the ones I’ve tried so far. The almond butter masks any eggy taste. However, it may be more calorie dense than others.
- It holds up okay for a breakfast sandwich. But even after toasting the middle was a tad soft.

2 minute keto bread, version 3

2 minute keto bread with bacon, egg, cheese and mayo
Version 4 – 9/4/17
- 1 TBSP almond flour
- 1 TBSP butter, melted
- 1 tsp Psyllium husk powder
- 1/4 tsp baking powder
- 1 egg
- Stir all ingredients together, then pour into a greased mug or ramekin
- Microwave for 90 seconds
- Cut in half and enjoy now, or toast in the broiler for a few minutes
While it smelt eggy, it didn’t taste eggy. I thought it was pretty good as long as it’s not served plain. I melted some cheese and mayo on top for a mock grilled cheese. It was pretty sturdy and held up.
